Banana choc chip muffin

150 g AP flour

100 g brown sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

200 g (3 pc medium) banana

2 egg

100g (1/2 cup) melted butter/oil

1 tsp vanilla extract

1 cup choc chips


(Double the recipe but with 500g bananas +peanut butter and choc chips )


Preheat oven 180'C

Mix dry ingredients (flour, sugar, salt, baking soda + powder)

Mix wet ingredients (banana, egg, oil, vanilla)

Mix dry + wet + choc chips

Portion into muffin cups

Bake for 20-25 mins or til toothpick comes out clean





Triple layer Biscoff cheesecake

 




Crust

100g wheetameal

160g Biscoff biscuits 

50g melted butter


Cheesecake

800g cream cheese

1 1/4 cup (300ml) whipping/double cream

1/2 cup (100g) brown sugar

1 tbsp vanilla extract

300g Biscoff spread (crunchy)

4 eggs


Topping 



Use 9" springform pan. 
Line whole pan with baking paper

Preheat oven to  150°C

Blend biscuits. Add melted butter.
Press into pan
Bake for 10 mins

Mix cream cheese, cream, sugar, vanilla & biscoff spread. Beat thoroughly. 
(Beat as much as needed before adding eggs)

Add eggs 1 at a time. Once eggs added, dont overbeat. 

Pour into pan. 

Bake for 1 hour at 150'C in a water bath
